Weight Watcher’s Zero Points Taco Soup Recipe

Vegetable soup recipes are great if you are dieting because they can fill you up and offer plenty of nutrients. Weight watcher's Zero Point Taco SoupYou can enjoy them as a snack or meal. But what happens when you are starting to get tired of having the same soup each time? This Weight Watchers zero plus point recipe is also based on vegetables, but using Mexican seasonings to give it a south of the border twist. Use onion, garlic, tomatoes, celery and bell pepper as our vegetables, along with chicken broth, salsa, cilantro, herbs, spices and sour cream for the body of the soup. You could omit the sour cream and serve it with the finished soup if you want, or make any other tweaks, such as adding less or more chili depending how spicy you want it.

Some people like to add shredded cooked chicken or turkey to the soup, a can of corn or black beans, or corn tortilla strips. Make sure you track the points if you are making additions like this. I add a little avocado, turkey and sour cream to mine, which makes my taco soup recipe a few more than zero points.

 

Weight Watcher’s Zero Points  Taco Soup Recipe

This recipe makes nine portions. You can either simmer it on the stove or make it in a crockpot. It will take about 30 minutes on the stove or several hours in the crockpot.

What You Need:

1 chopped yellow onion
3 chopped green onions
2 minced garlic cloves
12 oz canned diced tomatoes including juice
4 cups low-fat chicken broth
1/3 cup tomato salsa
3 chopped celery stalks
1/3 cup fresh cilantro
1/2 chopped red bell pepper
1/2 chopped green bell pepper
1/2 teaspoon dried basil
1/2 teaspoon cumin
1/2 teaspoon chili powder
4 tablespoons fat-free sour cream
Juice of 1/2 lime (optional)
1 tablespoon all-purpose flour (optional – adds points)

How to Make It:

Saute the yellow and green onions with the garlic in a large pot until tender. You can add a little water or some nonstick spray if needed. Add the tomatoes, broth, salsa, celery, cilantro, bell pepper, basil, cumin, chili powder and sour cream. Add the juice of half a lime if you want to. You can also add the flour. If you prefer thicker soup, add 2 or 3 tablespoons of flour instead of just one. Stir well and simmer gently until the vegetables are tender then serve hot.

Weight Watcher’s Zero Smart Point  Taco Soup Recipe

The recipe above is 0 plus points, but it’s 1 smart point. To make a zero smart point taco soup, you need to make it as an individual serving. Don’t ask me why. This is what the recipe builder says when I plug in all of the ingredients. This recipe makes 1 large serving. You can either simmer it on the stove or use precooked vegetables and heat it in the microwave What You Need:

1 cups low-fat chicken broth
2 tbsp cup tomato salsa
1/2 chopped celery stalk
1 tsp cup fresh cilantro

1 tbsp chopped green bell pepper
pinch dried basil
pinch cumin
pinch chili powder
1 tbsp fat-free sour cream
splash of lime (optional)
